For some locals here, the fall season means enjoying the taste of aged, spawning sockeye salmon. They are called sayallret in Yupik. They turn from a silvery grey to bright red bodies with green heads. Male sockeye grow a large hooked beak and a lump on their backs and are preferred for harvesting. Sayallret can be eaten in a number of ways; boiled and dipped in seal oil, half-dried with seal oil, or dried and smoked with seal oil.
